This programme is designed for Head Chefs, Managers, Shop Managers, Cooks, Qualified Trainers and all food handlers, who are involved in the preparation and service of food and management of a catering operation.
Programme Overview
Learners will understand and learn to recognise the key indicators for compiling and implementing allergen safe workspaces, menu descriptions, standard recipes requirements and staff awareness. The learner will also refresh their knowledge of the good practices required in their food operations in line with legislative changes and requirements of the Irish and EU law and standards. Certificate of attendance will be issued to all learners.
Programme Aim
The aim of the programme is to equip learners in a food environment with the knowledge to implement an allergen safe environment, to create allergen awareness and to understand the Food Information for Consumer legislation (FIC) which came into effect in December 2014.
